Easy and Tasty Stir-Fried Udon


This is a tasty and simple meal, that everyone will love. Perfect for those days when you are low on ingredients, it is like Chinese takeaway but better and cheaper.

SERVES 4, prepared in under 30 minutes


  • 800g Fresh udon, cooked
  • 1/2C Soy sauce
  • 750ML Vegetable stock, reduced to 125ml
  • 3T Roasted peanuts, to serve (per person)
  • Salt, to taste
  • 1/2t White pepper
  • 2 1/4 Cups, vegetables of your choice (recommended (all should be diced): onions, red cabbage, peppers, thinly sliced carrots, spinach, green beans)
  • 4 eggs, fried (O)


  1. Over medium heat, satay your vegetables with salt and pepper
  2. Add your cooked udon, soy sauce, vegetable stock, pepper and salt
  3. Give all that a good mix
  4. Serve with peanuts and fried egg (optional)
